Well sunlight changes second by second because of shading from clouds or simply just over the morning with regards to position. Thus whenever you are taking a snapshot to your stop motion lego animation the lighting will have changed. The light levels won't be apparent for you but when you take part in the animation back you will note what appears to be "light flicker". This is very distracting on the viewer. So to counteract it you'll want to filter out daylight to a large extent and rehearse artificial light. Three standard desk lamps is adequate nicely. Place them strategically around your set and maybe use some paper to dampen down or reflect the harsher lamps to soften the appearance and get away from light glare.
